Also, it would be cool if some of the contests could be moved to the weekend (if it doesn't inconvenience anyone). This way, people from most countries that work or go to university Mon-Fri will be able to participate. :)
And yet not a single contest on weekends. Too bad for us living in the Americas.

Is it some new practice to start contests in xx:35? I'd say it is less convenient to analyze how much time is left until the end of the contest than when the start time is xx:30 (or xx:00).

You can shift your clock just for the contest.
Agree. I'm not sure that small increase of number of registered people will be permanent, it doesn't simply work like this :) On the other hand, it will be indeed harder to use system clock time to understand how much time is left.
It won't be permanent. You're gonna have to make it xx:40 after a while.
So we will slowly move to xx+1:00 and everything will be nice again.
Another issue is that it will be impossible to switch back later (if we switch back after doing the xx:35 for a while, most people will think that contest starts at xx:35 and will be late for the round).
